Henderson food lovers have a new place to put on their dining list. Celebrity chef Emeril Lagasse has opened Meril at M Resort Spa Casino, bringing New Orleans-inspired flavors, creative comfort food, and breakfast-to-dinner service to 12300 Las Vegas Boulevard South.
Opened in July 2026 and named for Lagasse’s daughter, Meril adapts his New Orleans neighborhood concept for the southern Las Vegas Valley. Its Louisiana-inspired and contemporary American dishes offer neighbors another place for a casual meal or special night out.
What makes Meril different?
The menu balances familiar comfort food with dishes shaped by Lagasse’s Louisiana roots and travels. That gives groups with different tastes several ways to build a meal.
The M Resort describes the menu as a mix of wood-fired flatbreads, crispy Gulf shrimp tacos, and other familiar dishes with a more adventurous edge.
Eater’s opening coverage also highlighted gumbo, barbecue shrimp, and pineapple upside-down cornbread with bacon marmalade.
For a table with varied appetites, the range of small plates and main dishes makes it easier to mix shared starters with individual entrées.
The dishes above were highlighted around the opening; check the restaurant’s current menu for availability.
Breakfast has its own personality.
Breakfast is more than an afterthought at Meril, with beignets, housemade biscuits, and Bananas Foster French toast among the options described by the resort.
Those choices reflect the New Orleans influence without making the entire menu strictly Creole.
Breakfast has previously been listed from 6 to 11:30 a.m., with lunch beginning afterward. The morning menu may be especially useful for residents meeting friends before a busy day or hosting visiting relatives who want something different from a standard resort buffet.
Some breakfast specialties may change seasonally, so ask what is available when you arrive.

Dining room, terrace and atmosphere
The new dining room accommodates about 220 guests and uses floor-to-ceiling windows to bring in natural light.
An outdoor terrace adds another seating option, although patio availability will depend on weather, staffing, and reservations.
For birthdays or meals with visiting relatives, ask about group seating when booking. The resort offers on-site parking, and diners hoping to sit outside should have an indoor backup in mind during windy weather or extreme heat.
Guests arriving from elsewhere in Henderson may find the resort setting convenient for combining a meal with an evening activity, although travel time and parking conditions will depend on the day.
Hours, location and reservations
Meril is located inside M Resort Spa Casino, 12300 Las Vegas Boulevard South, Henderson, NV 89044, near the St. Rose Parkway interchange.
Published resort listings give hours of 6 a.m. to 10 p.m. Sunday through Thursday and 6 a.m. to 1 a.m. Friday and Saturday.
These are published hours, not a live operating-status check. Meal-specific service and holiday schedules can differ. Consult the official Meril dining page for the latest hours, menu, and reservation options, especially before a resort event.
What should Henderson residents order?
For a first meal, pairing a Louisiana-influenced shrimp dish with a wood-fired flatbread could offer a taste of the menu’s range. Breakfast visitors might instead start with beignets or a French-toast specialty, depending on availability.
Guests with food allergies or dietary restrictions should ask the staff directly about ingredients, preparation, and substitutions.
For budgeting, rely on current menu prices rather than old screenshots, and account for beverages, tax, and gratuity. If you are dining with children or someone with dietary restrictions, review the menu together before booking.

Pineapple upside-down cornbread with bacon marmalade is a little much for me. I'd probably stick with the barbecue shrimp, but I'm glad the menu has choices.
If you're going for breakfast, I'd check the hours first. The 6 to 11:30 schedule was listed previously, and resort restaurants do change things around.
The mix of flatbreads and Gulf shrimp tacos sounds useful for a group with different tastes. I'd still like to see the prices before calling it a casual meal.
Anita PatelAgreed, resort prices can change the whole plan. I'd check the menu before bringing a group.
That’s a fair point, variety alone doesn’t tell you what a meal will cost. We’d check Meril’s current menu or call the restaurant for up-to-date prices before planning a visit.
I usually take visiting family to the M Resort, so breakfast at Meril could be handy. Bananas Foster French toast would definitely get my aunt's attention.
kim_87My sister would go straight for that French toast too. Breakfast at the M sounds easier than heading up the Strip with visitors.
I wonder how the gumbo compares with what you get in New Orleans. Has anyone tried it yet? That's probably what I'd order first.
Nice to have another breakfast option near Henderson. The beignets and housemade biscuits sound good. I would check the current morning menu before making plans with friends.
